Gin Lovers Rejoice: Saint Lawrence Spirits Releases New Barrel-Aged, Navy Strength Gin
Clayton, NY - Saint Lawrence Spirits, a premium, small batch distillery located on the Saint Lawrence River in Clayton, NY, released its Navy Strength, Barrel-Aged Downbound Gin on February 1st, 2019.
Saint Lawrence Spirits Award-Winning Downbound Gin, released in September 2016, originally started as one of four varieties of gins that Saint Lawrence Spirits offers. Now, Distillers at Saint Lawrence Spirits have decided to age the Downbound Gin in used whiskey and bourbon barrels, specifically in Rye Knot Whiskey and Captain’s Flask Bourbon Barrels to give it a beautiful color and incredible flavor. The end result is a beautifully complex gin with hints of toasted pine and honey. The bottle features a parchment label, much different from the rest of Saint Lawrence Spirits labels, to celebrate the uniqueness of the gin.
Jody Garrett, Owner and Distiller, wanted to have a product in the line-up with a Navy Strength proof, due to the appealing sense of history the term offered. “While we knew Navy Strength meant 114 proof, or 57% ABV, we wanted to dig a little deeper about the story behind the term. We learned that in the 18th century, there was a certain quantity of Gin mandated to be on board of every Navy vessel, as it was believed to kill off scurvy and malaria. Royal Navy officers suspected their gin was being diluted by distillers and merchants when their gunpowder wouldn’t ignite after gin was spilled on it. If it still lit, they knew it wasn’t diluted and at least 114 proof.”
A Navy Strength and Barrel-Aged product is a rare offering in the United States. “We want to continue to create a variety of unique spirits, and having a Navy Strength and Barrel Aged product definitely gives us that compelling edge we are looking to develop”, said Head Distiller Bill Garrett.
Barrel-Aged Downbound Gin is available for purchase at the Saint Lawrence Spirits Downtown Tasting Room and liquor stores across New York State! The Saint Lawrence Spirits Chateau has featured the Barrel Aged Downbound Gin in their “French Creek 75”, a twist on the classic French 75, using champagne, lemon juice, and simple syrup.

CLAYTON, NY - November 15, 2018 - Saint Lawrence Spirits has just released the Kentucky Son Straight Bourbon, Icebreaker Whiskey, and Straight Rye Whiskey. These Whiskeys and Bourbon are possibly the most anticipated products since opening their doors, as they have been hibernating in barrels for two years (for almost as long as the Distillery has been up and running). The Bourbon’s namesake is inspired by a true “Kentucky Son”, Dr. Don Leopold. As one of the top botanists in the country, Leopold lent his assistance and advice to the distillers when they first began working on their whiskeys in 2016. Kentucky Son Straight Bourbon features notes of buttery biscuits and vanilla while offering a deliciously smooth taste.
The Icebreaker Whiskey has been maturing in a barrel thoughtfully named “Harvey Dent” by the distillers.“We are constantly working with two products at a time, one that we are cooking and one we are distilling. In the confusion of a busy day, I ended up switching the two products of the day internally and made the serious mistake of blending two totally different products together in the same barrel, essentially making it as “two faced” as fictional super-villain Harvey Dent. After running the numbers and determining the percentages of the blend, we mixed up a sample and we were pleasantly surprised! The blend offers a unique flavor profile of butterscotch and orange blossom.” Two more barrels were filled, and the Icebreaker will be released in small batches at barrel proof each winter.
Last but certainly not least, the Straight Rye Whiskey is a single barrel, single batch, single run product with only 123 bottles available. 400th Barrel Filled at Saint Lawrence Spirits!
October 5, 2018 - As Fall 2018 creeps up on the 1000 Islands region of New York, Saint Lawrence Spirits is busy as ever - filling barrels to send into hibernation for the next year (or two!). Over Columbus Day Weekend, Saint Lawrence Spirits Distillers, Bill Garrett and Ben VanTassel, filled their 400th Barrel.
The “Centennial” Barrel was filled with a mixture of Saint Lawrence Spirits Rye Knot Whiskey and Ryesing Tide Whiskey - a blend initially created by mistake by VanTassel. One of the major lessons learned throughout their distilling career is that mistakes happen, and sometimes those mistakes are turned into “happy accidents.” After sampling the concoction, the distillers made the decision to produce more. The first barrel filled with the accidental blend is now ready to be harvested as Saint Lawrence Spirits “Icebreaker” Whiskey, and will be released this November as a limited edition product. Only filling three barrels per year, the plan is to release the product in small quantities each Fall season for years to come.
Moving forward, Saint Lawrence Spirits will be scaling down on current Moonshine products, to focus more on barrel-aged products, such as their Whiskeys and Bourbons. In addition to the Icebreaker Whiskey, Saint Lawrence Spirits will be releasing their Kentucky Son Straight Bourbon in November. Kentucky Son will be the featured product at the Whiskey in the Wild Five Course Dinner and Whiskey Pairing at the Saint Lawrence Spirits Château on November 17th. Saint Lawrence Spirits Fills Their 300th Barrel
February 2, 2018 - Over the last 16 months, Saint Lawrence Spirits Distillers, Bill Garrett & Ben VanTassel, have filled 300 Barrels and they have met some very interesting characters along the way! Distilling is by no means a boring occupation and Bill and Ben have encountered some barrels with personalities of their own that keep them on their toes during their daily routine.

“If you look around our distillery and barrel storages, you’ll notice each barrel has our logo beautifully burned onto the heads. The truth is, not all the logos are burned. One of our barrel orders had come in without any logos. Our barrel supplier, in exchange, sent us custom stencils, the roller to do the job and special ink specifically designed to be used on whiskey/bourbon barrels. Having never used this ink before I decided to use a very small amount to test it out. The guinea pig was a small 5-gallon barrel prototype, containing our barrel aged Sazerac, a mixture of our award winning rye whiskey and rouge absinthe. I rolled the ink over the stencil and as I removed it, I realized that I was looking at something that much more resembled an ink blot test rather than our signature anchor logo. Almost as quickly we began referring to the barrel as “Rorschach,” and we proudly display it at our Downtown Tasting Room in Clayton, NY and serve samples to our customers.”

“As is common practice in the industry of distilled spirits, you often times “hydrate” your barrels before filling them with your precious liquid. Filling the barrels with hot water first ensures the wood has swollen and all the seems are tight. It is much better to discover a barrel leak with water, rather than the very precious alternative. If barrels sit too long, they can dry out and allow liquid to pass between the staves. The barrel that has been dubbed “Rickety Cricket” had been loaned to the Thousand Islands Museum as part of their Festival of Trees Display. Upon the barrels return we immediately noticed the barrel staves had parted company with the hoops and there was a distinct rattling sound whenever we attempted to move the barrel. Our attempts to fill the barrel with hot water were in vain. The water was exiting the barrel from all sides as fast as it was going in. We decided to take some drastic measures and gave Rickety Cricket the proverbial spa treatment. Wrapped and cocooned in hot wet towels, it began to regain its former glory. After about a week, the barrel was full of water and the outside was dry. Only then did we trust it to hold Saint Lawrence Spirits inside, and it has remained loyal to us ever since!”

“Sir Isaac Newton’s Law of Universal Gravitation was further proven by our “Newton” barrel. In the interest of saving space inside the distillery for more immediate production needs, our empty barrels are stored off-site until we are ready to fill them. One day during transportation, a rebellious barrel decided to exit the truck bed. Rather than floating freely through the air, gravity and inertia took over, slamming the barrel to the pavement and taking a violent tumble into a nearby field. Although the leaks created from the fall seemed pretty serious after numerous hot cloth compresses, the barrel regained its ability to hold liquids, with it's righteous name in tow.”
